[00:27:05] seasons, the team follows the rain regime to
[00:27:08] serve each ingredient at the ideal moment. We
[00:27:11] can really extend each season by looking
[00:27:15] at the ingredients, so we don't need to be marked, now it's summer, now
[00:27:19] it's autumn, we can really understand what there is, what's in
[00:27:23] season, what's producing to be able to use the ingredients in
[00:27:26] the period that is available to us, this is
[00:27:30] the peak, right? The idea came after chef Van Hauston and
[00:27:33] gastronomic researcher Catherina Cordaz created their
[00:27:37] own research center and spent two years studying
[00:27:41] Brazilian ingredients. Today the
[00:27:43] restaurant works with four different menus, one for
[00:27:47] periods of humidity, others for rain, one for
[00:27:50] strong winds and another for drought. There is no fixed
[00:27:54] date for each of them. The weather dictates.
[00:27:58] The dishes highlight ingredients produced mainly in the state
[00:28:02] of São Paulo, such as artichokes,
[00:28:04] chestnuts, grapes, guava, persimmon,
[00:28:07] peanuts, pumpkins, prepared with modern
[00:28:11] techniques. The proposal earned Tuju its third Michelin
[00:28:15] star this year, a recognition considered
[00:28:18] the highest in global gastronomy. A celebratory restaurant,
[00:28:22] right? It's not a restaurant for you to come every day to eat and finally
[00:28:26] go home, it's a special moment. The restaurant operates
[00:28:29] in a three-story building with only... nine tables,
[00:28:33] a cellar with 5,000 bottles and a tasting
[00:28:36] menu that costs R$ 1,650
[00:28:40] per person, and the objective goes beyond stars or
[00:28:44] social media. The idea is to offer a
[00:28:47] true experience, showing that haute cuisine
[00:28:50] can also learn to adapt to climate
[00:28:54] change.

[00:29:07] of great joy between mother and daughter, the two appear dancing in this hospital
[00:29:11] corridor in Porto Alegre. The girl is Lívia Borges, she is
[00:29:15] 14 years old and suffers from Guillain-Barré syndrome, a disease that attacks the
[00:29:18] nerves and causes very great muscle weakness. This record was
[00:29:22] made by a doctor who works in the building in front. Lívia commented on this
[00:29:27] recovery of movements after this treatment
[00:29:31] that was done.
